So tonight was one of those evenings where I wanted to do something quick but wanted a GOOD salad. This is what came out of it and was very tasty if I must say so myself!
I took pork tenderloin and sliced it into what looked like tiny boneless porkchops. I then basted it with Organge Citrus dressing. You can make your own orange citrus dressing but I have found a great one that is made by Litehouse dressings that is no full of junk and incredibly tasty. You will find it in the cooler section of a grocery store usually by the bagged lettuces.
After marinating the pork I put it in the oven under the broiler. It cooks fast so don't leave it to long. 4-5 minutes on each side should do it fine. In the mean time I mixed fresh spinach with green leaf lettuce. You could use all spinach or add red leaf lettuce too. I added fetta cheese, cucumbers, carrots and red pepper. I also had fresh pineapple that a threw in. When the pork was done I chopped it up into smaller pieces and added it to the salad. I topped it off with a bit of the orange cirtrus dressing, don't over do it! It was yummy and so full of flavors. Of course you can add what ever veggies you like and fruits too, manadrin oranges, grapes etc. You could add nuts of your choice and chinese noodles too if you like. Try it and throw in whatever you like!
